Fresh and fruity characters of white peach, green apple, honeydew melon with lifted notes of honeysuckle. Combined with a hint of shortbread and fresh yeast characters to deliver additional complexity.
Fruit-driven white peach and melon notes intertwine seamlessly with toast characters from time on yeast lees to deliver a tantalising combination of flavours. The delicate bead in this wine provides fabulous freshness and carries the flavour to a dry finish.
Drinking well now and over the next two years.
The fruit for this wine was selected from vineyards that have consistently produced intense flavour profiles with good retention of natural grape acid at ripeness. Once at optimum ripeness, the fruit was quickly harvested in the cool of the night. The highest quality juice was settled for two days at 10C before the clear juice was racked off the grape solids, ready for inoculation. A strong cool fermentation followed and when dry, each batch was left on yeast lees to impart texture and delicate yeasty notes into the end wine. The finished wine has a delicate bead that breaks evenly across the tongue with a creamy elegant mouthfeel.
