Distinctly WA Cabernet Merlot – medium bodied in style but with lengthy flavour and ripe silky tannins. The wine has a lovely fleshy texture and a light tannin grip on the finish distinct to Cabernet Sauvignon.

A very distinct vintage yet again for Western Australia! The dry, warm Spring and Summer meant it was tracking early but a tropical rain event in late January pushed back harvest dates slightly; the reds very much appreciated this rainfall. Just after Easter (late March) the tail end of a weak tropical system moved through which saw a small rain event - most reds were picked by this date with the rain being a great little freshener for the older Cabernet vines that still had fruit on them.
The parcels of Cabernet Sauvignon and Merlot grown for our E&T Range Cabernet Merlot are located on vineyards that consistently produce full flavoured wines with soft, silky tannins. In the lead up to harvest, the fruit in each vineyard Block was tasted twice weekly to ensure it was picked at its optimum. The Merlot was picked between midnight and early morning to ensure it reached the winery as cold as possible. The fruit was then cold soaked, this cold soaking technique contributes unique aromatics to the end wine, stable colour and ensures a soft texture in the resultant wine style. The Cabernet batches however, were picked between dawn and midday to ensure fruit temperature was 15-20 degrees – ideal yeast conditions to ensure immediate onset of fermentation 10% of the blend was matured using French oak for 10 months with the balance of parcels being kept un-wooded and fruit driven. All parcels were kept separate until the final blending stage with the finished blend then being filtered only once prior to bottling.
