A prolonged cool and wet growing season led to later maturity and, therefore, later harvest dates for many varieties. This allowed the Cabernet Sauvignon fruit to accumulate great intensity of colour and flavour, with lovely aromatics and superb tannin ripeness.
The fruit was picked in the coolest part of the night and brought to the winery to be cold soaked at cool temperatures for four days. It was then allowed to undergo fermentation on skins for 10 days, with the must aerated three times daily throughout the process. The seeds were then removed before the wine was pressed off skins to barrel. The wine was matured for nine to ten months in a combination of new (12%) and old French oak barriques and hogsheads before blending and bottling.
