The 2019 vintage was atypically cool, leading to wines with pristine natural
acidity and clean, bright flavours. Reduced yields as a result of the season led
to wines with lifted aromatics and concentrated flavour profiles.
The fruit for our Metricup Road Chardonnay was grown in vineyards located in the southern (Karridale), Central (Wallcliffe and Wilyabrup) and northern (Carbunup) parts of the Margaret River region, making it a rare wine that truly expresses the unique nature of Chardonnay from Margaret River. Blocks were selectively handpicked once the optimum balance of flavour ripeness and acidity was achieved. A special block was machine picked in the coolest part of the night to allow an extended period of skin contact. The parcels of cold fruit were directly loaded into the press with the best free-run juice being transferred directly into French oak barrels for wild fermentation on solids with no pressings. One small parcel (10% v/v) was fermented on a lot of solids in tank and then remained on yeast lees to mature, adding another layer of complexity to our end wine. French oak puncheons (500L) were mostly used along with some barriques (16% new) for the maturation period. No malolactic fermentation was carried out. All batches remained on yeast lees for ten months with regular battonage (stirring) until balance and integration in each barrel was achieved. Select barrels were then blended and the final wine was stabilised and filtered once to preserve freshness and the character and style of the wine before bottling.
