Pale to mid straw, fresh green rim and brilliant in condition.
Layers of pure Chardonnay aromas of ripe pear, golden delicious apple, honeydew melon and peach with enticing fresh yeast and shortbread notes.
Ripe, long and full flavoured with lovely sweet fruit filling the mouth and finishing refreshingly dry. A fleshy, slightly creamy mouth-feel from time spent on yeast lees adds texture and a seamless experience on the palate.
Peak drinking until 2020.
A very distinct vintage yet again for Western Australia. The dry, warm spring and summer meant it was tracking early but a tropical rain event in late January pushed back harvest dates slightly; we thought the fruit may suffer berry split and subsequent high disease pressure, however the hard work from our Vineyard Managers coupled with the warm, dry conditions and fresh daily breezes resulted in no issues. The Chardonnay fruit displays lovely aromatics, perfume and length of flavour.
The fruit was harvested in the coolest part of the night between midnight and dawn. The cold fruit was transferred into an airbag press which gently extracts the juice. The highest quality free-run juice cut from each batch was kept separate for fermentation and maturation to be considered for the final blend. The ferments were carried out at a cool 12-15⁰C to ensure fruit freshness and expression of the variety was retained in the end wine. Following fermentation, all parcels remained on yeast lees in tank for five months to impart mouth feel and balance to the end wine. Following blending, the wine was stabilised and filtered only once before bottling.
