The 2014 growing season in Margaret River commenced with what seems like text book spring conditions when looking at the data. Coming off a lovely cool, wet winter and consistently low temperatures the vines burst away in a slightly warmer than normal, the August, September and October temperatures were right on the long-term average with no extremes. November was a copy of October with ideal temperatures for that month.
The region then moved into weather from December to March that Margaret River is renowned for, temperatures were right on the long-term average with no spikes and lovely cool nights. 39mm of rain was received in March from the tail of Cyclone Olwyn. The timing and volume of this rainfall event was ideal to freshen the reds and kick them on to achieve full ripeness and ideal balance – a trait of the vintage.
Following a careful harvest, the fruit was de-stemmed and cold soaked in the fermenter to produce a fruit driven, aromatic wine with a lush, soft texture. The must is then warmed and inoculated with a yeast strain, selected to enhance the spicy varietal characters of Shiraz. The fermentation was conducted at a cool 20-22 degrees to encourage aromatic retention and to maximise colour intensity. During fermentation, each batch was thoroughly aerated to help produce a fine fleshy texture in the end wine. After 12-14 months maturation in American and French oak barriques, the wine was lightly fined and filtered only once prior to bottling.
