A very distinct vintage – the dry, warm spring and summer meant it was tracking early, but a tropical rain event in January saw 50-70mm rain fall across the region which pushed back the harvest dates slightly. The Cabernet very much appreciated this rainfall. Overall this was an exceptional year for our Cabernet, with higher yields than 2015 resulting in better vine balance and rate of ripening, smaller bunches and some of the smallest berry sizes we have seen for many years. Thick skins and concentrated flavours made this a Cabernet vintage that will last for many years in the cellar.
The grapes were picked in the early morning to retain their purity and condition. After gently removing the stalks, the cool must was soaked for 3 days prior to the onset of wild fermentation. The must was then overseeded with a neutral yeast strain and fermented. It was aerated and macerated 5 times daily during early fermentation, reduced to 3 times daily. Plenty of air was introduced each time to ensure a healthy fermentation and to achieve ideal tannin mouthfeel and structure.
After 10 days on skins, the very small amount of Malbec in the wine was pressed off to used French oak barrels, with the Cabernet being held on skins for a further 7 days to soften, integrate and balance the tannin structure in the end wine. The pressings fraction was blended back in to the free-run for both varieties. The wine was then matured in 22% new French oak hogsheads for 15 months and racked twice during this period, with each barrel being topped monthly.
