The good conditions resulted in smooth ripening for Sauvignon Blanc with great retention of flavour and natural acidity at full ripeness. The Sauvignon Blanc blocks were managed to ensure the vine canopies completely covered the fruit to prevent sunburn and to retain delicate fruit flavours in the grape and subsequent wine.
All fruit for this wine was picked during the coolest part of this night to ensure the fruit reached the winery as cool as possible. During fermentation, cool temperatures were utilised to encourage aroma production, texture and overall varietal character. On completion of fermentation, selected batches remained on light, fresh yeast lees for up to three months. The wine was then blended and lightly fined before being stabilised and filtered only once to produce a bottle-ready wine. This minimal handling has helped to retain the attractive primary fruit flavours and aromas that are the hallmark of the E&T style.
